Design, Materiality, and the Art of Slow Craft
There is a distinct parallel between thoughtful design and the composition of a truly great drink. Both rely on structural integrity, a deep respect for raw materials, and an intentional reduction of the non-essential. When you strip away clutter, what remains must stand on its own character, texture, and depth.
At Chenbrew, our philosophy is anchored in this minimalist pursuit. We believe that true luxury lies in patience—in allowing elements to evolve through time, capturing the essence of material honesty. Today, we are bringing this philosophy to a home-inspired, brilliantly reimagined classic that fuses modern mixology with the soul of Southern China: The Canton Highball.
The Materiality: Why Chenpi and Whisky?
In contemporary bar culture, the Highball is celebrated for its purity—a masterclass in how clean carbonation lifts and amplifies a spirit. When paired with genuine aged Xinhui Chenpi, the drink transforms into something entirely structural.
Matured slowly in coastal microclimates, authentic aged Chenpi infuses whisky with a deep, resinous, sun-baked citrus complexity and a radiant amber hue. The rich, warming malt notes of a good whisky wrap around the woody, medicinal top notes of the peel, creating a sophisticated bridge between Scottish distilling tradition and Cantonese heritage.
The Recipe: The Canton Highball (廣式陳皮Highball)
Rooted in an effortless home-infusion method, this recipe relies on patience overnight to extract the pure botanical character of the peel before lightening it with crisp effervescence.
Components
-
The Spirit: 2 oz (60 ml) to 2.5 oz (75 ml) of a smooth blended or single malt whisky.
-
The Core Botanical: 1 generous section of genuine aged Xinhui Chenpi (ideally aged 5+ years).
-
The Lengthener: 4 to 5 oz (120 to 150 ml) chilled, high-carbonation club soda or artisanal sparkling water.
-
The Ice: Large, crystal-clear artisanal ice cubes.
Method: Step-by-Step Construction
-
Awaken the Chenpi: Submerge the aged Chenpi in warm water for 15 to 20 minutes until pliable. Using the back of a small knife, gently scrape away the bitter white inner pith.
-
The Overnight Infusion: Place the cleaned Chenpi directly into a clean glass jar with your whisky. Seal tightly and let it steep overnight. By the next day, the spirit will adopt a stunning amber glow and a rich, layered aromatic profile.
-
Build the Glassware: Fill a chilled, minimalist highball glass entirely with large, clear ice cubes to lock in maximum carbonation and chill.
-
Pour the Spirit: Pour 2 oz of your Chenpi-infused whisky directly over the ice.
-
The Effervescence: Tilt the glass slightly and pour the chilled club soda gently down the inner wall. Give a single, brief, vertical stir from bottom to top to preserve the lively bubbles.
Design Notes for the Bar
Serve this drink in clean, elongated crystal glassware that highlights the brilliant amber tint of the whisky. Take a moment to nose the rim before your first sip—the crisp bite of soda meeting the warm malt and deep, woody fragrance of aged tangerine peel is an exercise in pure regional elegance and modern mixology.
Stay tuned as we continue to explore the intersection of heritage craftsmanship, modern design, and intentional living.
