The Materiality: Why Chenpi and White Tea?

Just as natural materials develop a rich patina over years of exposure, a true-grade Chenpi and aged white tea both transform entirely through time. Chenpi matures slowly in the sea-breeze microclimate of Xinhui, developing deep, woody, and herbal base notes; meanwhile, white tea aged over years unfolds with a warm, mellow sweetness.

They each carry the weight of time, complementing one another perfectly when brought together.

The Guide: The Chenpi White Tea Ritual

This brew honors traditional brewing proportions, utilizing precise temperature and timing to strike a perfect balance between the grounding nature of Chenpi and the natural sweetness of white tea.

  • The Tea: 5g of premium aged white tea (such as Shoumei or Bai Mudan).

  • The Companion: 1 to 2 sections of genuine aged Chenpi (ideally aged 5+ years).

  • The Water: Low-mineral purified soft water, maintained at 95°C to 100°C.

Method: Step-by-Step Construction

  1. Warm the Vessels: Choose a minimalist white porcelain gaiwan or a simple clay teapot. Rinse the vessel with boiling water to prepare it for the brew.

  2. Combine & Awaken: Place the Chenpi and white tea together into the vessel. Pour hot water over them for a quick 5-second rinse, then discard the water. This awakens the dried leaves and the peel, allowing them to release their dormant aromas.

  3. The Infusion: Pour hot water smoothly along the edge of the vessel. For the first infusion, steep for approximately 20 to 30 seconds before pouring.

  4. Enjoying the Layers: As you increase the steeping time slightly with subsequent infusions (enjoyable for 6 to 8 steeps), notice the evolution: the early steeps highlight the bright citrus notes of the Chenpi, while the deep, comforting sweetness of the white tea gradually takes center stage.
